French Toast with Blueberry Sauce


Prep Time: 15 Minutes | Cook Time: 8 Minutes | Total Time: 23 Minutes

Delicious French Toast made with day old homemade bread. This recipe uses fresh sourdough, but most homemade bread recipes will work, including my Easy French Bread. Top with a sweet and tangy blueberry sauce or the toppings of your choice! Makes 4 slices.

French Toast Ingredients

  • 4 thick slices of day old homemade bread (about 3/4")
  • 4 Large Eggs
  • 1 Cup Heavy Cream, Half and Half, or Whole Milk (I used Heavy Cream)
  • 1.5 Tablespoons Vanilla Extract
  • 1/4 Teaspoon Cinnamon
  • 1/8 Teaspoon Salt
  • Butter

Black and Blueberry Sauce Ingredients

  • 1 Cup Blueberries (fresh or frozen)
  • 1-2 Tablespoons Sugar (depending on how sweet you want it)
  • 1/4 Cup Water
  • 2 Teaspoons Corn Starch Dissolved in 1.5 Tablespoons Water
  • Juice from Half a Lemon (about a tablespoon)

Additional / Optional Ingredients

  • Fresh Berries
  • Powdered Sugar
  • Whipped Cream
  • Maple Syrup
  • Honey

Equipment / Supplies

  • Cast Iron Pan for the French Toast
  • Small Pot or Saucepan for the Blueberry Sauce

Instructions

Preparation

  1. The night before, cut off 4 thick slices of your homemade bread, about 3/4 inch each. Slightly stale bed is better for french toast as it will soak up more of the batter

French Toast

  1. Mix together the ingredients in a bowl and whisk until smooth
    Now is a good time to start on the blueberry sauce so that it is ready at the same time as the french toast
  2. Transfer the batter to a shallow dish
  3. Add the bread to the batter and soak for about 2 minutes per side
  4. Heat a cast iron pan on medium and generously coat with butter
  5. Transfer the bread to the hot pan and cook for about 4 minutes per side, or until your desired doneness
  6. Optional: Recoat with batter and fry a second time
  7. Top with the berry sauce

Making the Sauce

  1. Once you have whisked together the french toast ingredients, add blueberries, blackberries, sugar, lemon juice, and water to a small pot or saucepan
  2. Bring to a boil over medium-high heat
  3. Dissolve 2 teaspoons cornstarch in 1.5 tablespoons water
  4. Once boiling, add the cornstarch mixture to the sauce and stir
  5. Lower heat to medium-low and simmer, stirring often, until the sauce has thickened, about 10 minutes
  6. Remove from heat and allow to cool a bit as your dutch baby finishes

Drizzle the sauce on the dutch baby, dust with powdered sugar or any other topping you desire, and enjoy!
