Simple and Delicious Oven Baked Potato Chips
Ingredients
Russet or Baking Potato (1 potato makes about 50 chips)
Olive Oil (or other cooking oil)
Salt
Other Seasonings to Taste, I recommend:
Smoked Paprika
Garlic Powder
Onion Powder
Cayenne Pepper
Equipment / Supplies
Mandoline Slicer or Sharp Knife
Cast Iron Skillet or Standard Baking Sheet (I used a #12 skillet to make one portion, so if you're cooking for multiple people you may want to go with at least one baking sheet)
Instructions
Pre-heat your oven to 425 degrees fahrenheit
Slice the potato very thin, about 1-2mm thick. A mandoline makes this easy but you can use a sharp kitchen knife as well
Apply a thin layer of cooking oil to your cast iron or baking sheet
Arrange your potato slices so that they don't overlap
Drizzle a small amount of Olive Oil on top of the slices
Note: You can also pre-oil the potato slices in a bowl before adding to the pan
Place your cast iron or baking sheet into the oven and set a timer for 12 minutes
After 12 minutes, remove your cast iron or baking sheet from the oven and flip each potato slice using a pair of tongs
Set a timer for 12 minutes, but keep an eye on them. Depending on the moisture content of your potatoes, the amount of cooking oil you used, and the thickness of the slices they may take more or less time to finish cooking
When the chips are crispy and golden brown remove from the oven
Add seasoning to the chips in the pan while still hot
Toss or mix chips in the pan to evenly distribute seasoning and coat all chips
