Oven Baked Potato Chips
Simple, delicious, and healthy-ish oven baked potato chips
These potato chips are baked to crispy perfection in a cast iron skillet, but this recipe also works great in an air fryer

Ingredients
- Russet or baking potato (1 potato makes about 50 chips)
- Olive oil (or other cooking oil)
- Salt
- Water
- Other seasonings to taste
- Smoked paprika
- Garlic powder
- Onion powder
- Cayenne powder
- Cheddar cheese powder
Equipment / Supplies
- Mandoline slicer or sharp knife
- Cast iron skillet, baking sheet, or air fryer. A #12 skillet only makes about 1 large portion, so if cooking for multiple people you will need to use multiple pans or work in batches.

Preparation
- Pre-heat your oven to 425 degrees
- Slice the potato very thin, about 1-2mm thick. A mandoline makes this easy but you can use a sharp kitchen knife as well
- Soak the potato slices in water for at least 15 minutes to an hour
- Remove the potato slices and dry on paper towels
Cooking
- Apply a thin layer of cooking oil to your cast iron or baking sheet
- Arrange your potato slices onto your cast iron or baking sheet without overlapping them
- Drizzle or brush a small amount of olive oil on top of the slices
- Place your cast iron or cooking sheet in the oven and set a timer for 10 minutes
- After 10 minutes, flip the slices with a pair of tongs
- Set a timer for 10 minutes, but keep an eye on them. Depending on the moisture content of your potato, how thinly they are sliced, the temperature of your oven, and other factors, they may cook faster or slower
- When the chips are crispy and golden brown remove from the oven
- Add salt and other seasonings to the chips while still hot
- Toss or mix the chips in the pan to evenly distribute seasoning and coat all chips
